Chapter 2: The Pressoir

After the grapes have been harvested, the most important stage is the vinification in the cellar. This vinification begins with pressing. At Roche des Bancs, we are fortunate to have received our pneumatic press for the 2021 harvest. The magic happens when the grapes are pressed and the vinification decisions are made: blending, maturing in oak barrels...
